East-facing slopes get sun in the morning and west-facing in the evening so the overall amount of sunlight is the same. The significant contrast is therefore between south-facing and north-facing slopes.

Veronika, they say something gets lost in translation, so maybe that's the case here. You may know that the word "shady" is connotationally loaded... so avoid it. I had to smile when I read "shady side farm"...

Here is some more info and a few more suggestions. This is basically in support of Andrew’s suggestion.
North- and south facing can also be understood as
South-West to South-East facing or North-West to North-east facing (see links below). This would clarify/specify what is meant in your context and would include farms that are not just exactly “north”-facing” or “south’-facing.
Suggestions for translation:
South-West to South-East facing/-sloped farms
North-West to North-East facing/-sloped farms
or, paraphrased:
farms located on slopes that receive abundant sunshine/that receive little sunshine
---------------------------------------------------------
other suggestions (but not as specific, of course):
South-sloping/sloped farms
North-sloping/sloped farms
farms on North slopes
farms on South slopes

North slopes

The elevation and aspect of a site should be considered. Both of these factors influence microclimate and, to a large extent, the characteristics of the soil at a given location. Sites that face south and southwest and sites at lower elevations typically have warmer, drier soils in contrast to north and east aspects or higher elevations, which are cooler and more moist. In the mountains, elevations above 3,000 feet and north-facing slopes usually have more soil organic matter, while clay content tends to increase at lower elevations or on south-facing slopes.

Hangausrichtung

SHADY SLOPES – MORE DANGEROUS THAN SUNNY SLOPES
Slope exposure is the direction in which a slope inclines.
Northern slopes often feature powder snow until late in the day and therefore they are especially dangerous. Snow layers on shady slopes remain weak for a long time.
> The slope directions marked red indicate the area where 70% of all avalanche victims lose their lives.

Climate in the Rocky Mountains is generally cold in the winter and mild in the summer. Highland climates, however, are difficult to classify because of great variation from valley floors to mountain peaks. In addition, south facing slopes which receive much sunshine can be very different from colder north facing slopes in climate and vegetation. Latitude plays a major role as the mountains chains existing further to the north are much colder and have more permanent snow and active alpine glaciers than those to the south.

Discussion
However –and this is gist of the matter here– if "sonn(en)seitig" is just a synonym of "südseitig" or "in Südlage", and "schatt(en)seitig" a synonym of "nordseitig" or "in Nordlage" , the original also ignores the east-facing and west-facing farm – which means that my translation is accurate.
