Source text - Spanish El dulce de leche fue realizado según un protocolo de fabricación en una paila abierta a
escala de planta piloto, a partir de una formulación habitualmente utilizados en plan
industrial, que incluye el agregado de agentes estabilizantes. Para todas las experiencias
se utilizó una misma partida de leche en polvo descremada reconstituida al 9 % de
sólidos totales con agua de red, ajustando el contenido graso mediante el agregado de
grasa láctea anhidra (Butter-oil) y el pH inicial con hidróxido de calcio p.a. El WPC fue
adicionado, en la proporción correspondiente (0% - 2%), de un concentrado comercial
con 35 % de proteínas solubles.
Translation - English The sweet milk spread was made according to a manufacturing protocol in a pilot plant scale open kettle. The protocol is based on a formulation normally applied in industrial plan which includes the addition of stabilizing agents. In all cases the same parcel of skimmed milk powder was used. It was reconstituted to 9% of total solids with drinking water, adjusting the content of fat through the anhydrous butter oil, and the initial pH with calcium hydroxide p.a. The WPC was added in the corresponding proportion (0% - 2%) of a commercial concentrate with 35% of soluble proteins.
